This is an easy cake recipe, which has an unique taste of milkmaid in it. This is so soft and yummy that you can't just stop with one slice. The main ingredient of this cake is milkmaid and hence the name of the cake. It has no extra sugar, just milkmaid was perfect enough for sweetness. If required you shall add sugar extra.
I made this when my cousin visited us and she liked it a lot. With minimal ingredients it tastes so good. The recipe is adapted from 'nam veetu samayal'. I have used my kitchenaid to make my work a lot easier. Yet this can be done using any stand mixer, cake mixer or manually as usual too. Below is the picture of kitchenaid that i have used in making this cake.
INGREDIENTS
Dry ingredients:
1/2 cup maida (organic preferably)
1 tsp baking powder
Wet ingredients:
1/2 tin condensed milk (200 gms)
2 eggs (yolk and white seperated)
2 drops of vanilla essence (I did not use them)
2 tbsp butter (at room temperature)
Optional:
chopped nuts as required
Method:
1. Preheat oven to 200 C. Take the flour in a bowl, add baking powder and mix really well.
2. Seperate egg yolk from white and take the white in the kitchenaid bowl. With the balloon whisk attachment beat the egg white at speed 8. This step is really optional, but this makes the cake more airy. If making without any gadgets just beat the egg whites using balloon whisk till they froth well.
3. AFter few minutes the white turns like clouds forming peaks. Transfer them to a bowl.
4. Now to the kitchenaid bowl add egg yolk and beat with the batter mixing attachment. Now add milkmaid into it and conintue to beat for a while. Please refer notes for manual preparation.
5. After they mix well, add butter and vanilla essence, continue mixing. The mixture looks like below one.
6. Now add the flour little by little with 2-3 seconds of intreval allowing it to get mixed well. Do not overmix as it leads to formation of gluten and makes the cake hard. Check for sweetness and add powdered sugar if required.
7. Now lets add the beaten white and fold very carefully. Whites might be seen here and there, which is ok. Dont mix hard as it leads the air bubbles in the white to escape. Add nuts if using and give a final mix.
8. Grease the baking tin with little butter and sprinkle flour on it, then tap off the excess flour from it. Add the batter and tap to level it.
