This may sound unusual, but this has become a favourite and repeated recipe in our daily cooking. Raw banana skin has lots and lots of fibre not only that, the taste is also too good. Those who suffer from constipation can include this in their diet frequently. This can be prepared like our usual stir fries. I have tweaked it a little using coconut oil and cumin powder. These two render a unique flavour to this. If you wish to skip coconut oil, cook it in any other cooking oil and drizzle just half a tsp of coconut oil in the end optionally for enhanced flavour. I have not added coconut in this, but adding coconut enriches the taste. Freshly ground cumin powder is my favourite ingredient in this. The aroma is totally outstanding.
INGREDIENTS

2 Large banana skin (raw banana/vazhakai)
2 tsp coconut oil/any other oil
1 large onion chopped
1 tsp cumin dry roasted and powdered
1 tbsp coconut shredded (optional, I didn't use)
few curry leaves
2 dry red chillies
1/2 tsp mustard
a pinch of hing
1/4 tsp turmeric powder
salt to taste
Method:
1. Cut skin of raw banana along with little of white part in it for better taste. Chop them into bite sized piees and soak them in water until use.
2. Dry roast and powder cumin seeds. In a pan, heat oil, add mustard seeds, hing and curry leaves.
3. Add chopped onion, torn red chillies and turmeric powder. Saute them till translucent and add banana skin. Saute for a minute.
4. Add little water and salt, allow it to cook well. Check for doneness and add cumin powder, coconut (optional) and switch off.
A good side dish for rice with sambar, rasam or curd.
Notes:
Use freshly ground cumin powder for good flavour.
Using coconut oil is optional but recommended.
Cut the skin with little of white part for good taste.
