Marshmallow (without corn syrup)

Pillowy soft marshmallows just melts in mouth. If you have a stand mixer or hand mixer and love marshmallows just close your eyes and try them. They are very easy to make and kids will love them a lot. The two main ingredients are gelatin and sugar. I was not comfortable using gelatin, but one fine day I was craving for something sweet and determined to try marshmallow. For the sake of marshmallow gelatin was excused. If you are strict vegetarian, then this is not for you. 

One important point to be kept in mind is marshmallow is very sticky. It may mess up everything so be prepared. It has to be set for atleast 4 hours (in a cool atmosphere) at room temperature. If the climate is hot then atleast 8 hrs. It needs a lot of time for setting so allow it a good resting time. Make sure all the materials are ready and in reach. Transition of steps is so fast that you have to keep everything ready before starting the process. The entire process needs more patience, your workplace may turn untidy and the wait time is a lot, but totally worth at the end. When you devour them they just melt in your mouth and your hand reaches out for more !.

INGREDIENTS

nutritional information: serves 8 (halve the recipe if required)

2 cups granulated sugar
3/4 +1/2 cup of water
1/3 cup sugar powdered
1/3 cup cornflour
2 tbsp gelatin
strawberry/vanilla essence
oil to grease pan
cornflour to dust

Method:

1. To 1/2 cup of warm water add gelatin and mix continuously until it dissolves.

2. Mix powdered sugar and cornflour. Keep this mixture ready before starting. Prepare a pan by greasing with oil and dusting with cornflour. It has to be dusted well to prevent marshmallow from sticking to the pan.

3. Heat a pan, add sugar and water. Let it cook until it reaches a single string consistency.

4. Once it has reached single string consistency then act quickly and mix the gelatin mixture into it. Mix them well until combined and switch off the stove.

5. Transfer the mixture into a mixer with the whisk attachment. Beat them until they are white, fluffy and no more increase in volume. It takes from 10-15 minutes depending upon the speed of the mixer. Do not panic, wait till the mixture turns white, light and sticky.

6. See how the mixture has turned white and flows like a ribbon from the whisk. Add vanilla essence or strawberry essence as required and mix it for a few seconds and transfer it the greased pan.

7. Level it with a silicon spatula and dust with sugar-cornflour mixture. Allow it to set in room temperature for 8 hrs. Then transfer it to a well floured platform, using a sharp knife cube and toss them in the sugar-cornflour mixture. Store them in a zip lock pouch or a air tight container.

It tastes good when fresh so prepare in lesser quantity and enjoy them !. I have used 2 cups of sugar and the yield was too much for a small family. So halve the recipe if making for a nuclear family. 

Notes:

  • After cubing the marshmallow transfer to an airtight container immediately. The more it is exposed to air the less fresh it tastes.

  • It tastes best for 2 days. After which it has to be coated again so make a small batch and finish it off soon.
