Thin buttermilk (with steps of removing butter)

Recently, I have stopped taking in milk and started on buttermilk due to some health issues. Milk is hard to digest with aging, but buttermilk on the other hand is easier to digest and has more benefits than milk. It is a common task in our homes to prepare home made curd. Instead of having curd, churing the butter out and having buttermilk is more beneficial. It helps to flush the toxins out from our body. After having a heavy meal, it is best to have a glass of buttermilk, which aids in good and easy digestion, esp after food rich in ghee or oil. It gives a feeling of fullness and satisfaction. 

One thing to be watched while having buttermilk is to limit the intake of salt. It tastes really good with salt, but do it deliberately.There are many types of buttermilk like full cream buttermilk, no fat buttermilk etc. This is a thin buttermilk recipe, where equal amount of water and curd is added. Almost most of the butter is removed. To me it tastes very better after removing all the butter. You'll be surprised to know how much butter you shall remove while making buttermilk. Now onto the recipe.

INGREDIENTS


curd chilled for 30 minutes
water 
salt/ black salt to taste

Method:

1. Take required amount of curd. Chill it for 30 minutes. While beating it in a mixer, it slightly turns warm so chilling helps effective seperation of butter. Add it do a blender and blend for 30 seconds without break.

2. Let it rest for 5 minutes by which a thick layer of foam forms on the top. Add equal amount of water and blend again for 30 seconds. Butter starts to floats on the top.

3. After this step, transfer the buttermilk with butter to a big cup and pour it interchangingly, so as to form bubbles. Butter seperates more and more each time you do it. See more of butter has formed below after doing so. Seperate butter and store in refrigerator. Fresh butter and thin buttermilk is ready !.

Enjoy your buttermilk with black salt or regular salt. Tastes really good after removing butter !.
