Sweet cinnamon squares

I have done apple pie for a lot of times, I knew that cinnamon goes well with apple, but skeptical to try. For this particular recipe, I was left with no choice as it was the star ingredient. To my surprise, the cinnamon flavour is so soo good. Yes, belive me ! the whole house is filled with the sweet aroma of cinnamon. Now I'm happy to use cinnamon in baking. 

This is a very easy recipe, yes I do keep saying this for many of my recipes, but truly easy peasy. This simplicity impressed me to try and yes, now I feel it is worth trying it again and again. 

INGREDIENTS

nutritional information: Serves 2 

3/4 cup maida (organic preferably)
2 tsp dry yeast
1 tsp + 4 tbsp sugar
2 tsp + 1.5 tbsp butter (at room temperature)
little butter extra for greasing baking pan and brushing after baking them

Method:

1. In a bowl of warm water,  mix yeast and mix well. Leave it aside until frothy. Take the flour in a bowl.

2. Using the yeast mixture and 2 tsp of melted butter, knead the dough.Leave it in a warm place around one hour until doubled. I generally leave it inside oven.

3. Grind granulated sugar along with cinnamon to a fine powder. Deflate the dough, knead a little and transfer the dough to a well floured surface .

4. Roll them flat to approx 1 cm in thickness. Lift the dough after each rolling to make sure that they do not stick to the bottom. Sprinkle flour to the base if necessary, avoiding over flouring which makes them dry.Apply soft butter all over generously. Sprinkle good amount of cinnamon sugar over them. Be generous.

5. Apply a thick layer of cinnamon sugar. Cut them into stripes of one inch using pizza cutter or a knife. Stack 3-4 layers of it.

6. Cut them again into squares. Grease a baking pan with 1/2 tsp butter and sprinkle dry flour on it. Tap off the excess flour. Carefully arrange the squares into the baking pan.

7. Allow them to raise for 30 minutes. See how they have risen. Preheat oven for atleast 10 minutes and bake at 200C for 18-20 minutes. Bake till the top turns golden take care not to overbake. Cool on a wire rack and brush with butter when hot to make them more soft.

Top them with ample of cinnamon sugar. Thinly sliced apples that are cooked with little sugar and few drops of lemon juice goes well with it.

Notes:

  • Use maida for this recipe, wheat may make it dense.

  • Use butter and sugar generously to get good results. Please do not skimp.
