Paneer recipes are always a hit. This is our recent favourite, which gets done in few minutes, yet tastes great. We recently bought a sandwich maker with toasting and grilling option, so I was more curious to find out the other ways of using it. Used it for grilling fish, preparing bread croutons for soup and grilled paneer tikka, everything turned out great !. I am not pretty much happy with the grilling mode in my oven. So this works out great for me. You shall use either oven, stove top or sandwich maker as per your preference. It turns out good in all, but if you have a sandwich maker (grill) then do go for it, as it saves a lot of time and very handy.
Paneer tikka recipe calls for marination, but this method does not require any. Just gather the spices and other ingredients, toss paneer in it and cook. It will be ready in a few minutes. There are no fancy ingredients too, usual items in pantry.
I have not used diced capsicum, onion or tomato in it. We don't like them so I just used paneer, but if you wish you shall include them while tossing the paneer and cook them along with it. While it is still hot, arrange them in toothpicks or mini skewers and enjoy your tikkas hot.
If cooking on stove top, grease your pan well and cook them on both sides until nicely toasted. Add oil now and then as necessary. You will end up using more oil in stovetop than used in sandwich maker.
INGREDIENTS

150 gms paneer ( preferably homemade)
1 small capsicum -green, yellow or red (optional)
few diced onion (optional)
For marination:
1.5 tsp ginger garlic paste (crush 2-3 garlic and 1/2 inch ginger)
1.5 tbsp besan flour
1/2 tsp ajwain crushed in mortar pestle
1 tsp cumin freshly powdered
1/2 tsp red chilli powder
1 tsp coriander powder
1/4 tsp turmeric powder
1/2 tsp amchur powder (or lemon juice)
1/4 tsp garam masala
salt to taste
1.5 tbsp thick curd
Method:
1. Gather the ingredients required for marination except curd and mix well.
2. Add curd and make a slightly thick paste.
3. Cut paneer flat to the thickness of bread. Add paneer cubes into the paste and mix carefully without breaking them.
4. Preheat the sandwich maker. Brush grill plates with little oil.
5. Arrange the paneer cubes slowly on the plate. Close and cook. When the indication is on, open and using wooden spoon slightly losen them (some might lightly be sticking on to it). Flip and cook the other side too.
While still hot arrange them on tooth pick and serve them with onion and lemon wedges.
Notes:
Use kashmiri red chilli for a bright colour.
Homemade paneer is best to use.
Try to serve them hot. It takes only a few minutes on the sandwich maker, so make it ready and cook when required.
Cook on an iron or nonstick tawa for stove top version, using oil as necessary to avoid sticking.
It is midly spiced, increase spice level if required.
