Peanut chikki (using granulated sugar)

Peanut chikki is an addictive snack. The peanut bars made with jaggery is familiar with everyone. I have seen elders at home make them. This is a little bit different, made using white granulated sugar (our regular sugar). It has only two main ingredients, roasted peanuts and sugar. If you have roasted peanuts in hand then the work is half done. It makes an excellent snack cum sweet for the kids to munch on. 

Sugar is caramalized on dry pan without water. Do not doubt on this step, do not add water at all. You shall get a clear idea of how the sugar caramalizes in the stepwise pictures. Do not leave the sugar too long at this stage for it may turn the chikkis hard to bite. Slight brown colour makes them brittle and crisp, which is what expected. You have to act quickly as the next stage progresses very faster. Keep everything ready before you start the cooking process. 

INGREDIENTS

nutritional information: yields 12 squares approx
1 cup peanuts roasted
3/4 cup sugar
oil few drops to grease the plate

Method:

1. Dry roast peanuts and remove the skin.

2.  Crush them coarsely in a mixer. Just pulse them two to three times.

3. Add sugar to a dry pan and do not add any water. Cook them on a medium flame with stirring in between. They will start clumping together.

4. Now the sugar has started browing slightly. Stir well so that all the clumps are dissolved. When it turns into a liquid bring down the flame to low. Act very quickly at this stage do not keep the sugar for more time in this state or it may turn the chikkis very hard. One or two undissolved sugar lumps are ok.

5. Add peanut ino this and mix well, switch off.

6. Immediately transfer it to a greased plate (backside of the plate works fine). Roll them thin using a rolling pin (chapathi roller). Draw lines over them as desired. This has to be done very quickly before it cools else lines cannot be drawn. Cool them for 10 minutes and break them gently, store in an airtight container.

It can be stored in an airtight container, but sadly it gets over soon ! .

Notes:

1. Grease the plates and keep them ready beforehand.

2. Sugar can be increased to 1 cup, but do not decrease more than this or it is hard to form the chikkis.

3. Once the sugar melts, add the peanut mix well and switch off. Cooking more may make them hard.
