Roasted cumin raitha

I tasted a simple raitha at Mast kalandar and wanted it to try it the very next day in my home. It was so simple with just cumin, salt and little sugar, but the taste was lingering a long time. A nice accompaniment either be it parathas or any flavoured rice like jeera rice or pulao. To prepare this raitha storebought ones are too good as they are thicker than home made ones. This was made with home made curd only. Just ignore the water floating on the top and gather the thick curd.

Freshy pounded cumin seeds that are lightly dry roasted has an excellent aroma against the readymade ones. So whenever needed make it fresh. 

INGREDIENTS

 Nutritional information: Serves 2

1 cup curd beaten smooth
2 tsp cumin dry roasted and powdered
2 tsp sugar (adjust to taste)
salt to taste
2 tsp chopped coriander leaves (optional I forgot to use)

Method:

1. Dry roast cumin and powder it. I just pounded it coarsely.

2. Take enough curd in a bowl and beat till smooth.

3. Add sugar, salt and cumin powder. Mix well, taste and adjust the ingredients as per your preference.

Goes well with any stuffed parathas or flavoured rice.
